This was a great, easy recipe. Clint and I both really enjoyed it, and I ate leftovers for a snack later this evening.
4-6 Green Peppers
1 lb. ground turkey (or lean beef)
1 tbsp. olive oil
1 cup onion, chopped
1 cup + 4-6 tbsp. spaghetti sauce (I like the Heart Smart Ragu)
8 oz. mushrooms, chopped
1/2 cup part skim shredded mozzarella
Preheat the oven to 350 degrees. Slice the tops off the green peppers and discard the seeds. Place them in boiling water for 5 minutes. Drain and place in baking dish. In a skillet, saute the onion and mushroom in olive oil until tender. Remove mushroom and onion from skillet. Brown ground meat. Add in sauteed vegetables and 1 cup spaghetti sauce until warm. Fill peppers with ground beef mix. Top each filled pepper with a tablespoon of additional spaghetti sauce. Bake in oven for 20 minutes. Top each pepper with mozzarella and bake for an additional 10 minutes.
