Slow Cooker Chicken Teriyaki


I made this with sides of steamed broccoli and edamame (sprinkled with chipotle chili powder, sea salt, and black pepper), and crunchy Philly rolls and smoked salmon rolls. The chicken teriyaki didn't have the thick, super-sweet sauce that is usually associated with teriyaki sauce, but it was still good.


INGREDIENTS
6-8 skinless chicken thighs
1/2 cup soy sauce
2 tbsp. brown sugar
2 tbsp. grated fresh ginger
2 garlic cloves, minced
DIRECTIONS
Wash and dry chicken. Place in slow cooker. Combine remaining ingredients. Pour over chicken. Cover. Cook on high 1 hour. Reduce heat to low and cook 6-7 hours. Serve over rice.

Five-Veggie Stir-Fry

We're really big into meatless recipes right now for healthy reasons as well as financial ones. Meat is so darn expensive...and frankly, who needs it when you've got great recipes like this one?

INGREDIENTS:
2 tablespoons cornstarch
2 tablespoons sugar
1/2 teaspoon ground ginger
1 cup orange juice
1/4 cup reduced-sodium soy sauce
2 garlic cloves, minced
2 large carrots, sliced
2 cups broccoli florets
2 cups cauliflowerets
4 teaspoons olive or canola oil, divided
1 cup quartered fresh mushrooms
1 cup fresh or frozen snow peas
4 cups hot cooked rice

DIRECTIONS:
In a small bowl, combine the cornstarch, sugar and ginger. Stir in orange juice, soy sauce and garlic until blended; set aside. In a nonstick skillet or wok, stir-fry the carrots, broccoli and cauliflower in 3 teaspoons of oil for 4-5 minutes. Add mushrooms, peas and remaining oil; stir-fry for 3 minutes. Stir orange juice mixture and add to the pan. Bring to a boil; cook and stir until thickened. Serve over rice.

Speedy Chicken Stir-Fry

INGREDIENTS
8 oz. angel hair pasta (capellini), uncooked
2 cups small broccoli florets
1 lb. boneless skinless chicken breasts, cut into thin strips
1/2 cup KRAFT Asian Toasted Sesame Dressing
2 Tbsp. soy sauce
1/4 tsp. each: ground ginger, garlic powder, crushed red pepper
1/3 cup chopped PLANTERS Dry Roasted Peanuts

DIRECTIONS
COOK pasta as directed on package, adding broccoli to the boiling water for the last 3 min. of the pasta cooking time.
MEANWHILE, spray large nonstick skillet with cooking spray; heat on medium-high heat. Add chicken; cook 6 to 8 min. or until cooked through, stirring occasionally. Stir in dressing, soy sauce, ginger, garlic and crushed red pepper; cook 1 min., stirring occasionally.
DRAIN pasta mixture; place in large bowl. Add chicken mixture; mix lightly. Spoon evenly into four serving bowls; sprinkle with the peanuts.
